poet, once praised tea as Mr. Beautiful Leaf and he wrote an article named Mei Ye Zhuan to honor tea. Tea, as Mr. Sumentioned, is like Mr. Beautiful Leaf with fresh characteristic and gentle heart. It’s a great delight when brewing Jasmine tea with its aroma full of the environment. 每碗可放花茶三克,当茶叶落入洁白的茶杯时,正如绚丽的花在飘游。(投茶)

Three grams are acceptable for each bowl. Tealeaf floating in the snow white teacup, is just like florid flowers.

用旋转的方法将少量热水冲入杯中,它的温暖象春风使茶芽慢慢舒展,花茶开始显出它的生命力,水与茶的相互融合将使香气更明显、滋味更浓郁。摇动杯子可使茶叶充分接触热水,新鲜、浓郁、纯正的花香伴随着清幽的茶香,令人陶醉。泡花茶的水温应用95度,用三点头的方法依次序向盖杯倒水,这样可以使茶汤更均匀,也表示我们对来宾的欢迎。倒茶至70%,留下杯中的30%代表装着主人的情意。

Reelingly put a little boiling water into the cup. Being like spring wind, the high temperature makes tea leaf extends . Jasmine tea starts to express its vitality. The combination of boiling water and tea makes the aroma more obvious. Shaking the cup enables the tea leaf to touch boiling water sufficiently. It’s ravishing when a kind of fresh, strong and pure potpourri crossing over with tea aroma.

泡茶所的盖杯由三部份组成,盖代表天,托代表地,中间的茶杯代表人,泡茶的过程象天地人三物合一,才能共同孕育出名茶。

The bowl cover is composed of three parts, repectively represents the God, the people and the land. The process of brewing tea symbolizes the integrated of these three. “一杯香茶奉献给知已”,奉茶时应双手捧杯,举到与眉毛齐高,看着嘉宾,点头行礼,然后从左到右,把茶奉出,最后一杯留给冲泡者。喝茶时,天地人不分离,一小口一小口的喝,以细心耐心来喝出茶的真味。

As an old Chinese saying goes, a cup of good tea is designed for a best friend. When serving the tea, we are supposed to hold the tea cup to the height of our eyebrows, our eyes look at the guest, nod our head to salute, and hand out the tea from left to right. The last cup of tea is for the host himself. When drinking tea, the God, the people and the land should not separate. Tea is expected to be drunk with small sips, because it’s believed that only with patience can we get the real taste of the tea.

The way to brew Longjing tea

中国地域广阔,不同的地方生产出各种不同的茶类,我们常见的有:绿茶、乌茶茶、红茶、普洱茶,而绿茶是中国历史最悠久、品种最多、饮用者也最多的茶类,它蕴含很多的维生素和氨基酸,具有清热、减肥、美容的功效。今天我们可以品尝到其中三种出名的绿茶——龙井/毛尖/碧螺春,先请茶艺师为各位冲泡龙井。

China is a huge geographic country, with different places producing different kinds of tea, such as green tea, oolong tea, black tea and puer tea. Among all these tea, green tea enjoys the longest history and the best range of variety in China. What’s more, more people prefer green tea than other tea. It is rich in vitamins and amino acid, with the effect of clearing heat, losing weight and it is good for your beauty. Today we are going to have a taste on three famous variety of green tea. They are respectively Longjing tea, sliver needles and Bi Luo Chun. Now first please invite the tea master to brew longjing tea for everyone.

冲泡前,可先观赏茶叶——称为初现仙姿。

Before the brewing, we can watch the tealeaf - this process is called the first view of beauty.

龙井茶以“色翠、香郁、味甘、形美”四绝著称,素有国茶之美誉。茶外形光滑平直,色翠略黄。在清明时节前采摘的明前龙井最为珍贵。

Longjing is famous for its four unique characteristics –green color、fragrant scent、sweet flavor and beautiful appearance. It is known as the country tea. It has smooth flat shape and slightly yellow color. The most precious tea is the early spring Longjing, which is picked before the time of Qingming.

传统的龙井常采用高身玻璃杯冲泡,以便观看茶的外形和汤色。冲泡前先将杯子烫一下——也称仙鹤戏水。温杯可以提高杯子的温度,使茶的色、香味以更好的发挥。

Traditional Longjing is always brewed in a full-height glass in order to watch the shape and the color of the tea. We used to scald the glass before brewing, which is also called “red-crowned crane playing in the water”. Scalding the glass can raise the temperature of the glass. That is good for the color and the scent of the tea to give out.

茶是上天的恩赐,大地养育的精品,龙井采用细嫩叶芽制成,在冲泡时,水温不应太高,大约在80——90度。冲泡前先将沸水放凉。

Tea is the gift from the heaven and the elaborate work made by earth. Longjing is made from buds. When brewing, the water temperature should not be too high. The most appropriate temperature is around 80 to 90 degree centigrade. Make sure to let the boiling water to become cool before brewing.

放入茶叶时两手呈兰花状,用茶向导将茶叶放入玻璃杯中——也称落花纷纷。

To put the tea leaf in, two hands should be orchid-like. In addition, we put the tea leaf into the glass with the help of some tools. We call this beautiful scene as “flowers falling one after another”.

沿着杯壁慢慢注入1/3的热水湿润茶叶,茶芽慢慢展开,也称为初润芽叶。

First of all, pouring the hot water along the side of the glass slowly until the water fill one third of the glass. Then the buds are gradually spread, also known as the “beginning of moistening the buds”.

此时可轻轻摇动杯身,让茶与水充分接触,茶香悄然飘出。

At the time we can shake the glass softly to allow tealeaf and water full contact, so that the fragrant scent of tea will give out.

再用山泉水充分冲击茶叶,使维生素等快速溶出,可将龙井茶的神韵发挥至极,这也称水满春江。

Second, use the mountain spring water to brew the tea thoroughly. It will make it easy for the vitamin to dissolve quickly. In this way, the charming of Longjing will go to the climax. This progress is also known as “fulfill the Spring River”.

奉茶时正如仙女祝寿,奉茶象征着对客人的祝福,祝各位长寿延年。

To present the tea, the presentation should act like fairies celebrating the birthday of others. Because presenting the tea means making good wishes to the guests. What’s more, may everyone live long!

上好的龙井茶多采用一芽一叶制成。冲泡之后,茶汤黄绿、明亮,茶芽直立杯底。饮用前各位可欣赏这漫天花雨。

he high-quality Longjing is usually made by one bud and one leaf. After the brewing, the tea is

bright mixed with yellow and blue. The tea buds stand on the bottom of the glass. You can admire this flower rain before you drink the tea.

细品美汤:主人来宾共饮同欢,绿茶茶汤泽淡绿,香气馥郁,其滋味鲜爽,不刺激,宜细心品饮,才能领略它的真香实味,让我们在这清香幽韵的境界中,静静地体会一下来源于生活之道的茶艺中所包含的深刻内涵吧!

TEnjoy the tea: guests and hosts drink the tea together happily. The tea is slight green with a fragrant scent. The taste is fresh and not very strong. We should carefully taste in order to enjoy the real taste of its flavor. Let’s experience the hidden meaning of the tea art which comes from our lives in these quiet and fine surroundings. 普洱的冲泡与品鉴

茶,发源于中国,带着浓浓的中国古文化气息!普洱,是各茶类中的后起之秀,却又风靡世界,象酒一样,时间越长最陈越,被誉为能喝的古董。让我们一起来领略——普洱生茶、熟茶的风韵。

Tea, which originates in China, is rich in ancient culture of China. Pu’er tea is quite young when compared with other kinds of tea. However, it has been popular around the world today. It is like wine, being kept for the longer time, the better it becomes. Therefore, Pu’er tea is also known as “drinkable antique”. Let’s enjoy the taste of raw tea and ripe tea of Pu’er.

1、 冲泡前需焚香祈福,表示对神农赐茶、先人种茶的感激,也祈求“福、禄、寿”三星高照。

先观赏茶叶:在春天摘采古树的茶芽,经制作分生熟两饼。

Before brewing the tea, you have to incense for praying, and express the gratitude to Shen Nong and our ancestors, for they gave us tea. And also pray for blessing.

(1)生茶没经发酵,经日晒压制而成,会随着时间的变化越来越香醇。

First, you could appreciate the tea-leaf: The buds of tea that picked in spring can be classified into raw and ripe after being processing. (2)、熟饼仿照生茶存放多年后的样子,用现代技术制作而成,让各位不用花十年八年,就可以马上喝到生茶陈化的结果,茶叶颜色暗褐,显露金色芽头。先用普洱刀拆散茶饼。 Raw tea is a kind of Pu’er without being fermented, which is produced after solarized. This kind of Pu’er would be more and more fragrant when the time goes.

2、 烫壶如天降甘雨、万物更新:冲泡第一步先洗涤茶具,我们以纯洁的心情,迎接茶叶的新生。

Scalding the teapot is like the rain makes everything renew: The first step of brewing the tea is cleaning the tea service. We salute the reborn of the tea-leaf with pure mind.

3、 普洱进殿,释放韵味: 生饼青绿,外形壮结,如青年的皇子走入殿堂,霸气十足。 熟饼如一位高雅的佳人,轻轻步入,光芒四射。盖杯是普洱重获生命的殿堂,茶落入碗中,壶因茶更充实 ,茶因壶而重获生命。

3. Next comes to Pu’er’s releasing its charm: Raw tea looks green and as strong as a young prince who is walking into a hall. Ripe tea seems to be a graceful beauty, walking gently, radiantly. Covering the cup makes Pu’er reborn. When the tea-leaf is put into a bowl, the teapot becomes richer due to the tea, while the tea is able to get vitality again because of the teapot.

4、 洗尽凡尘,重现金身:先用沸水唤醒茶叶,清冽茶香阵阵袭来,无需等待,马上将茶汤倒出,茶叶现出油亮的叶芽。

4. Finish cleaning the tea then the tea shows how it looks like originally: First, use the boiling water to flush the tea-leaf. When the fragrance of tea comes out, please pour out the tea infusion

immediately without waiting. Then the tea-leaf would turn out shiny bud. 5、 (注水:)山泉徐流、茶水相融:用好的山泉水注入,使茶与水相互交融,蕴育新的篇章。看,那倾倒而出的的茶汤,像山泉在欢唱,重获自由;

5. (Affusion) Pour the water into the teapot slowly and mix the water and tea-leaf: Use pure mountain spring water to brew the tea. The sound of tea infusion is pouring out, sounds like a song of a mountain spring. 6、 (泡茶:)又如神话中的龙凤再现:现在奉上来宾的品杯,我们等待品尝名茶普洱。 6. (Brewing) Just as the dragon and phoenix show up in myth: Now put forward the cups of our guests and be ready to taste the famous Pu’er. 7、 (奉茶:)好茶敬客:两种普洱对比强烈,生茶茶汤金黄;熟饼颜色暗红和润。借这浓浓的香茶,祝贵宾前程似锦,吉祥如意。

7. (Presenting) Presenting the Pu’er with good quality to our distinguished guests: When compare the two kinds of Pu’er tea, you could find great difference between them. Infusion of raw tea looks golden while ripe tea is dark red. We wish our guests happiness and good future with the tea. 8、 (品茗:) 生熟佳品:手中的普洱味道丰富,生饼汤滋味酽烈,洋溢着野性之美。熟饼汤色红艳,如深山的红叶,味道柔和,感觉象丝绸在舌尖上轻轻滑过,普洱是有生命的茶,是时间的积蓄,它倾注着前人的绵绵情意,品茶时想起制茶人为我们准备的这份深情礼物,令人霎时感动。天高气爽、亲朋满座、品上一杯好茶,实在是人生美事。

8. (Taste) Both raw tea and ripe tea have good quality: Pu’er has plenty of flavors. Raw tea tastes strong and makes you feel its wild while ripe tea looks as red as maple and tastes as soft as silk on your tongue. Pu’er is a kind of tea that owns life. It is also the accumulation of time. When we taste the tea, we might be moved by the emotion of tea producers. Pu’er is a present for everyone. It is such a luxury that having a cup of tasty tea with friends and family in a shining day. 9、 愿你常到中国来,再会这娇容百变的普洱佳人!
