海南风味清凉小吃。特点是清甜润滑,感觉舒服,有清暑降温,润喉之功效。绿色番薯叶的营养价值最高,番薯叶中所含的酚类其主要成份中含有抗癌绿原酸及其衍生物,具有抗氧化的能力。
吃法:用蕃薯粉制成粉条,再配以姜汤水,冰块即成。

糟粕醋
糟粕醋,又称“女人醋”,“三八醋”,是海南文昌北部的一种传统民间小吃,拥有上百年的历史,发源于文昌铺前镇。采用民间酿酒过程中产生的酒糟发酵产生的酸醋作为汤料,外加蔬菜,动物内脏,脆骨,海鲜等制成,味道酸辣可口,口感十分独特。糟粕醋对人体血液循环比较好,长期食用可以美容、减脂、降压。
吃法:将米粉、猪肺、猪血、海带丝、野生海菜、细酸菜、白萝卜块等配料预先切好,吃时将配料在沸水里烫热,然后再将热热的米醋浇上去即可。

锦山牛肉干
海南牛肉干以文昌锦山最为出名。锦山牛肉干做得好,关键有两点:一是精选当地肥壮牛肉,二是讲究配制技术。经此法制作的锦山牛肉干肉脆味美、香甜适口,越嚼越有味,是送饭下酒的不二选择;吃时还可以蘸醋和辣椒配成的佐料,又有不同风味。
原料:牛肉等。
制法:
1、一般经过选肉、切块、配料、腌肉、熬煎、晒干、烘烤等工序。选购肥壮的老龄牛的精净肉,切成厚1厘米,大3厘米,长5厘米的肉块。
2、将肉块放入花生油、酱油、香料、蒜头、糖、酒、胡椒粉等配料中腌制一定时间后,放料锅里熬煎。
3、熬煎时要掌握好火候。煮好后晒干。晒时要十分注意适度,晒不干会发臭,晒太干则失其味。晒后又放回锅里再小火烘烤。

2、Pickle the beef with peanut oil, soy sauce, sugar, wine, pepper, garlic and spices for a while. Then have a stewing and pan-frying.
3、Then dry the cooked beef in the sun moderately. If the beef is not dried enough, it will start to smell, at the same time, if the beef is so dried that will lose its relish. After drying, roast it again and then serve.
海南鱼茶
鱼茶并非普通意义上泡水喝的茶,也叫鱼酸,是一种腌制食品,其香味却可与茶香媲美,用来下饭胃口大开。 鱼茶是黎族苗族招待客人的特色菜肴,也是黎苗族人的风味食品。传说很久以前的一次丰收盛宴后,为了不浪费吃剩的东西,黎苗族同胞无意把米饭和生鱼放在一坛子里盖好,几天后发现其味鲜美异常,“鱼茶”因而流传至今。
原料:淡水活鱼、盐、凉米饭、酒曲、炒米。
制法:
1、先把肥大的淡水活鱼收拾干净,切成块拌上盐,腌上一二个小时。
2、挤干盐水,掺入凉米饭、酒曲或炒米搅匀,再装进干净的坛子里密封起来。
3、如天气炎热,放至7-10天即可启盖食用;如天气寒冷,则半个月或一个月方可食用。
Hainan fish tea

Raw materials: freshwater fish, salt, cold rice, distiller's yeast, parched rice Cookery:
1、Clean freshwater fish, cut it into several parts and salt it for 1 or 2 hours.
2、Squeeze salty water, and add cold rice, distiller's yeast, parched rice, then mix them up. Next, put them in a clean jar and seal it up.
3、If it is burning hot, serve it after 7 or 10 days, but if it is cold, serve it after half a month or a month.
菜包饭
菜包饭是把肉、菜、饭混在一起,用菜叶包着用手捧着吃的一种吃法。这种吃法看似不优雅,却别有一番风味,很原汁原味。菜包饭在海南定安县十分流行,古时的定城人正月初三赤口日不串门不拜年,全家团聚吃菜包饭,有拢住家财不流失之意。
原料:油菜叶、米、肉丝等。
制法:
1、煮好干饭,把包饭用的油菜洗净滤干备用。
2、把肉丝、虾仁、腊肠、坡芹、韭菜、大蒜、六薤、酸菜等分开炒好。
3、将三至四片洗净晾干的油菜叶整齐铺在碗里,涂上蒜蓉酱、生抽。
4、然后铺上一层薄热饭,再放上一层肉丝、虾仁、腊肠和其他刚刚炒熟的菜肴。
5、接着又再铺热饭和菜肴,适量后包裹成球状,从碗里倒出双手捧着吃。
Ssambap

1、Prepare cooked rice, clean and dry some rape leaves
2、Fry shredded meat, shrimps, celeries, leeks, garlic, sausage and sauerkrauts separately
3、Spread three or four pieces of rape leaves over a bowl and wear shredded garlic sauce and light soy sauce.
4、Then cover a thin layer of hot rice and then cover another layer of shredded meat, shrimps, sausage and other cooked things.
5、Go on covering hot rice and cooked things until they are enough then roll it into a ball. Finally, serve it with hands.
