摘 要
风味豆奶饮料是人们在豆奶中加入一些风味物质以改善和提高其口感的一种新型豆奶饮料,其中在豆奶中加入一定量的果汁而制成的果汁豆奶饮料,既保留豆奶的原味又增添了果汁的芳香,口感和风味极佳,而其中桔汁豆奶,作为风味果汁豆奶的一种,近年来在国际市场上尤其是日本发展很快并得到了消费者的青睐。
在分析豆奶的消费市场和综合各方面的因素后,本厂进行了年产3600吨桔汁豆奶饮料的工艺和工厂设计研究,在制作豆奶的基础上增加发酵过程,以调节豆奶的酸度使果汁与其更好的结合,生产出风味更佳的桔汁豆奶。本厂着重从项目背景、生产工艺、设备选型、物料衡算等各方面进行分析,以及投资成本、经济效益等方面进行了分析计算。
本厂厂址选择建设在安徽省合肥市双凤经济开发区,该地区不仅具有丰富的原料来源,便捷的交通运输等先天条件,同时也有政府给予的高度支持。厂房占地总面积7200㎡,固定资产投资为1295万元,效益回收期为1.6年。综合分析,该项目具有较高的可行性。

Abstract
Flavor soymilk is one of the new-style soymilk , which is made by adding some special flavor substances, aiming at improving the taste of the product. And one of them is called Orange-soymilk, just as its name implies, this is the kind of soymilk that contains orange juice. It keeps the original taste of soymilk and the fragrance of orange juice at the same time, which tastes so good, so it is popular among the consumers in the international market, especially in Japan.
On the analysis of the consumer market and comprehensive factors, I write this paper mainly about factory desire and production techniques of orange-soybean-milk beverage 3600t per year. The key point of making orange-soybean-milk is the process of formation ,which adjusts the acidity of soybean milk so as to make the flavor better when mixed orange juice. This paper focus on parts of item background, production techniques, equipment selection, material balance etc. as well as investment costs, and economic benefits estimate.
The location of the factory is chosen at Shuangfeng economic development zone of Hefei. The region not only has a rich source of raw materials, transportation and other congenital conditions, but also the high level of support given by the Government. The plant occupies a total area of 7200 square meters, fixed asset investment of 12.95 million yuan, the effectiveness of recovery period is 1.06 years and the final result shows that the design has a relatively high feasibility. 1 绪 论
1.1 大豆及豆制品
大豆含有丰富的蛋白质、脂肪、磷脂、胡萝卜素、多种维生素、氨基酸和矿物质等众多营养成分,并能有效阻止人体钙质的流失,经常实用有助于健康还可平衡体内营养结构,减少或避免肥胖病、营养不良等现代儿童常见病的发生,并可调节血脂、保护肝脏、防止血管硬化和促进思维能力,大豆中所含的微量成分异黄酮对人体还具有防癌、防止骨质疏松等 保健作用。
大豆卵磷脂是大豆中最主要的成份之一。在大豆卵磷脂的分子中存在着卵磷脂和不饱和脂肪酸两个基因,其中卵磷脂的分子水解成甘油、胆碱、磷酸和人体所必需的脂肪酸后被人体吸收。如果缺乏必需脂肪酸,则机体所有系统都会出现异常,所有生物膜组织的正常发挥都需要必需脂肪酸,同时,它们还有某些生理调节作用。所以,脂肪酸对维持人体的正常生理代谢起着重要的作用。卵磷脂中还含有人体非常重要的胆碱成份,并有降低胆固醇的作用[2]。
锌的补充——大豆蛋白是一种完整的蛋白质,功能与肉、蛋、奶中所含的蛋白质相同,而又不含这些食品中的胆固醇和饱和脂肪。2011年,美国食品和药物管理局批准,颁布了有关大豆蛋白的健康通告,确认了“食用大豆蛋白有助于减少血管发病率”这项研究结果;在近期落幕的《大豆食品与健康》高层研讨会上来自全国各地的营养与卫生食品专家们以确凿的数据证明了一个事实:即大豆蛋白是进行铁、锌强化的最好的载体之一,因此,在大豆强化铁和锌可以作为解决缺铁性贫血和锌缺乏的一种有效途径[3]。大豆蛋白可以使铁处于一个稳定的状态中,不会出现一般情况下的氧化变色和铁锈味等不利现象,能够较好的发挥其对铁的吸收作用。儿童由于缺锌所造成的危害也是很严重的,会造成经常性口腔溃疡,而大豆蛋白对防治锌缺乏是很有效的。
豆制品主要分为两大类,即发酵性豆制品和非发酵性豆制品。发酵性豆制品是以大豆为主要原料,经为生物发酵而成的豆制品。如腐乳、豆豉等。非发酵性豆制品是指以大豆或其它杂豆为原料制成的豆腐,或豆腐再经卤制、炸卤、熏制、干燥的豆制品,如豆腐、豆奶、豆浆、豆腐丝、豆腐皮、豆腐干、腐竹、素火腿等[4]。从营养角度来看,豆制品除可作为补充膳食中的优质蛋白质外,还含有VB12、降血脂等有用物质:豆渣是很好的优质食用纤维;大豆中含有的皂甙具有减少体内胆固醇的作用;豆油中的卵磷脂能去掉沉积在血管上的胆固醇,在体内能水解成胆酸,促进脂肪酸代谢:大豆中还含有异黄酮,有抗
